Natural process, 800 to 1,200 masl, Bourbon and Mondo Novo varieties. Fine Cup, Strictly Soft grade with a strict 17/18 large-bean screen, dried on patios and finished at the cooperative’s dry mill. This coffee provides the chocolate base. Sumatra: Fair Trade organic Mandheling from 928 smallholder farmers organized around PT IKA in Atu Lintang, Aceh. Wet hulled in the traditional Giling Basah style, 1,500 to 1,600 masl, with Bourbon, Catimor, and Typica varieties. This component adds body and depth. Colombia: El Tiple lot from small family farms around Pitalito, Huila. Washed process, 1,500 to 1,800 masl, Excelso EP grade. This component contributes sweetness and a balanced finish.
