Pine nuts are among the most prized nuts in Mediterranean and Middle Eastern kitchens, and these ivory kernels represent the finest end of that tradition. Harvested from the stone pine (Pinus pinea) — an umbrella-shaped Mediterranean tree native to the Turkish, Greek, Italian, and Iberian coastlines — they are long, slender seeds with a pale cream color that sets them apart instantly from the shorter, more angular Asian varieties. The flavor is buttery and delicate: a soft, creamy sweetness with a faint resinous note that fades quickly on the palate. They are one of the mildest nuts in existence, which is exactly what makes them so versatile. They carry other flavors without overpowering them, add richness without weight, and transform when lightly toasted into something noticeably deeper and more aromatic. In Turkish cuisine these nuts are called çam fıstığı or dolmalık fıstık — the second name literally means the pine nut for dolma — and they go directly into the rice mixture used to stuff grape leaves, bell peppers, and eggplant. They are a standard ingredient in İç pilav, the aromatic rice pilaf made with currants and spices. They appear in aşure, in semolina halva, in baklava, and scattered over roasted lamb or vegetables. Beyond Turkish cooking, they are the original ingredient in pesto alla Genovese — the Ligurian basil sauce that became one of Italy's most recognized exports — and work in pasta dishes, salads, grain bowls, and baked goods, raw or briefly toasted in a dry pan. Two brands are available here. Arifoğlu, the Istanbul spice company founded in 1944 at the city's historic Spice Bazaar (Mısır Çarşısı), offers a 22 g pack — a cooking portion for a single batch of pilaf or pesto — and a 100 g pack for regular cooks. Tuğba Kuruyemiş, a well-regarded Turkish nut brand, offers a 50 g option. All packs contain raw, shelled ivory pine kernels with no additives. Storage: pine nuts are high in delicate oils and turn rancid faster than most nuts. Keep in a sealed container away from heat, light, and moisture.
