In Turkish cuisine these nuts are called çam fıstığı or dolmalık fıstık — the second name literally means the pine nut for dolma — and they go directly into the rice mixture used to stuff grape leaves, bell peppers, and eggplant. They are a standard ingredient in İç pilav, the aromatic rice pilaf made with currants and spices. They appear in aşure, in semolina halva, in baklava, and scattered over roasted lamb or vegetables.
