This ruby-red, world-championship-winning jam is cooked softly in very small batches because there is a very specific point at which the jam becomes ready. The artisan jam maker knows that a sudden aroma explosion means that the raspberry jam is ready to settle (so that the fruit is distributed evenly), before being poured warm into the jars for cooling.
