Arugula has a bold flavor that provides a nice kick to a wide range of dishes. This is the standard variety, also known as Roquette or Rocket. It produces long, dark leaves that are have multiple lobes along the length of each stem. Arugula grows best in cool-weather seasons and can be planted in early spring or fall once temperatures cool. It is self-sowing and will replant itself if allowed to bolt in late spring or early summer. This green is known for an easy germination and bountiful production. Cut smaller for milder flavor, or allow to get larger for a more zesty product. Plants will continue to grow when cut, providing multiple harvests throughout the growing season. Arugula is a great addition to any salad or sandwich, but is also great when cooked in stir fries or as a pizza topping.
