ASAFOETIDA is the resin of the giant fennel plant. It is native to Asia and is used primarily in Indian cuisine. It is also called Devil's Dung, among other flattering names, due t o its pungent smell! The taste is similar to sauteed garlic and onions, and adds those flavours to curries and lentil dishes.
