Ascorbic Acid (Vitamin C) is an antioxidant which is commonly added at bottling of wine to prevent it from the oxidative effects of browning and spoilage in white wines during the racking & bottling periods of oxygen exposure. Ascorbic acid is also used as an antioxidant to remove oxygen in beers and other fermented beverages, increasing the shelf life when added prior to packaging.
