Named for the small town in northern Italy where it was born, this version however is made in Wisconsin and is quite different from the Imported Italian Asiago. It has become more popular in North America than the Italian version because the flavour resonates very well with cheese lovers here, and it has been incorporated into many dishes. Often times, when a recipe calls for Asiago, this is the one they are often asking for. Overall good nibbling cheese if you love a good bite, but also works very well in cooking and melting.
