Bortolomiol’s “AUDAX ZERO.3” is a delicate, slightly floral and harmonious Prosecco DOCG made from 100% Glera grape variety, with a fine and persistent perlage. Harvested by hand in the second half of September, vinification will undergo classic white wine process “off skins” by gentle pressing, and a primary fermentation at controlled temperature with selected yeasts. The second fermentation occurs in large tanks following the Metodo Martinotti, with foaming taking place within 2 months, and a fining period of about 1-3 months. The extra brut version of the Valdobbiadene Prosecco Superiore DOCG is the natural expression of the Glera grape variety, conserving its delicate and aromatic bouquet. This sparkling wine with a sugar level very close to zero cleanses the palate perfectly, delivering a delicate, fruity, slightly floral aroma. Food-match: an excellent wine for pairing with fish courses. Ideal for aperitifs, it also pairs very well with first courses and mixed fried fish. Recommended serving-temperature of 6°-8°C.
