HOST: Diamond Crystal® Salt Co GUEST CHEF: Javier Bardauil | BARDA “Salt of the earth” means a person or group that is genuine, unpretentious, honest, and hardworking. At Outstanding in the Field, our task is to seek out individuals who embody this credo. While that is certainly true, in this case, we are also after the literal salt. As the birthplace of Diamond Crystal® Salt Co. and the Alberger method of crystal salt-making, St. Clair has quietly shaped the way chefs season and prepare their food since 1886. Produced in the same St. Clair facilities established more than 140 years ago, this iconic method of salt-making remains deeply woven into the region’s identity and culinary heritage. As part of a special collaboration with Diamond Crystal® Salt Co., we invite guests to gather along the shoreline and reflect on the ingredients, traditions, and craftsmanship that shape the meals we share. Chef Javier Bardauil will bring his signature style of Argentine open-fire cooking to the evening, drawing from the traditions of live-fire gatherings and the rustic cuisine of his Buenos Aires roots. Influenced by his years working alongside Francis Mallmann, Bardauil’s menu will center on flame-roasted meats, vegetables, and seasonal ingredients prepared simply and thoughtfully over fire GUEST MOCKTAIL PARTNER: Little Saints GUEST SPIRITS PARTNER: Two James Spirits
