The blend combines traditional pinot noir, pinot meunier, and chardonnay alongside rare heirloom varieties pinot gris and arbane harvested from the base year. Vinification utilizes native wild yeasts for spontaneous fermentation, avoiding modern cellar adjustments or filtering to respect the fruit. Aged on its fine fermentation lees before secondary bottle fermentation, it is finished with a very low dosage. It pours a pale straw color with silver reflections and a fine, energetic mousse. The nose opens with delicate aromas of green apple, lemon oil, fresh blossoms, and sea salt. On the palate, the vinous frame balances floral freshness with a tense, mineral-driven line of chalky acidity. Crunchy flavors of grapefruit pith and white cherry wrap around a textured mid-palate. It finishes completely dry and crisp, leaving a lingering, mouthwatering impression of maritime salinity.
