Ayocote Blanco i s a dense, flavorful bean with a thick skin. When fully cooked, its creamy, starchy texture develops a delicate potato-like flavor. Originally from Oaxaca, Mexico, the Ayocote family was one of the first cultivated crops of the Americas.
