You’ll want this one in bulk. About the cultivar: A well-known cultivar for eating, with a variety of colors and a small, round shape. It is thought to be originally from Palestine, and brought to Spain during the 16th century. It grows abundantly, and due to a later harvest than Oliana, yields a bit more oil per kilogram, even despite its petite size. Tasting notes: Az-Azeytun Arbequina variety tends more toward aromatic leafy herbs like arugula, fennel, and sage. This oil moves us up the bitter/spicy scale a little bit, with a mild piquancy and something like a citrus pith that follows along.
