Hatch sources and blends to hit a specific flavor profile rather than a specific origin or producer, which means the components can shift seasonally while the cup stays the same. Because Hatch hasn't published specifics on the origins or producers behind Supernova, we can't tell you exactly whose farms went into this bag. What we can say is that Hatch holds seven active Q-Graders on staff — licensed coffee quality evaluators — which means every component gets scored and approved against a professional sensory standard before it makes it into a blend. Supernova sits in the middle of Hatch's coffee lineup: sweeter and more approachable than their bold Blackout blend, less experimental than their Starlight offering. It's the one they describe as a crowd pleaser, and they mean that straightforwardly, not as a compromise. About Hatch Hatch was founded after its founder spent time living in West Africa, where he started roasting coffee by hand. That's where the interest took root. The company eventually moved into a roastery and brewery space in Markham, Ontario, where they built out their production facility and started roasting commercially. They launched with cold brew first, intentionally, because they thought it would take the longest to develop as a product category. Today Hatch roasts on two Loring machines — a 35kg drum they've had since 2015 and a 70kg drum added in 2022 — alongside a Stronghold S9X for smaller development roasts. They won Th3rd Wave Coffee's Roaster of the Year in 2022. They still describe themselves as a startup.
