Babel comes from Laura and Paulo's L'étranger, made off old Roussillon plots on limestone, marl and shale. Native yeasts, no fining, no filtration and almost no sulphur, which is h ow everything leaves this cellar. The Roussillon is capable of whites that turn broad and tiring, and this is not one of them. Citrus peel and white orchard fruit over a herbal, faintly saline base, with a texture that gives it grip without adding weight. With a year more in bottle than the current release, it has softened at the edges without losing the line. Serve it cold, but not so cold that the detail disappears. Show more
