Royal Baerii caviar from Kaviari, a Paris-based caviar house. The caviar has flexible, silky grains with mineral and dried fruit notes. The caviar has flexible and silky grains tha t have mineral and dried fruit notes. It comes from the sturgeon Acipensar Baeri. The grains are medium sized (1.5 to 2.5mm) and dark grey to ebony in colour. Caviar should ideally be consumed using a spoon made from mother of pearl or bamboo, never metal as this can interfere with the subtle flavours of the caviar.
