Launched in 1974 by Gilbeys of Ireland and now produced by Diageo, Baileys invented the Irish cream liqueur category and remains its global benchmark. Production runs at two Irish facilities — Dublin and Mallusk, Northern Ireland — drawing fresh cream from 40,000 cows across 1,500 Irish dairy farms, processed by Glanbia in County Cavan. The cream is homogenised with triple-distilled pot-still Irish whiskey within hours of milking, forming a stable emulsion without added preservatives; cocoa and vanilla round the base.
