Rafi’s Balti is a savoury, tan gy, tomato-based curry perfect for scooping up with naan bread or chapati. The name ‘Balti’ originates from the pot that the curry is traditionally cooked in rather than a particular ingredient or method of cooking. Traditionally the recipe is served in its own wok, alongside rice and other accompaniments. This is Rafi’s version of the popular recipe made famous in the Birmingham ‘curry houses’.
