Bang bang traditionally refers to the sticks (Bang 棒) used to smash and shred the chicken into strips. For us though the bang bang evokes memories of those red chained lunar new ye ar firecrackers: each chicken strip, a little fire cracker, popping and bursting with flavor as you chew.
