Our 100% grass-fed grass-finished filet tenderloin tips aka "filet tails" are cut from the tenderloin (same as the filet mignon!) and are an exceptionally tender cut. The differenc e here between a filet head (mignon) and a filet tips are simply the shape and size, but both have the same buttery texture.
