The flat-iron steak comes from the oyster blade muscle (shoulder) which has been cut into thin steaks, which never fails to deliver a punch of meaty flavour.Inspiration: Super for grilling and thinly slicing perhaps for an Italian Beef tagliata with rocket and parmigiano reggiano.
