Liver is so nutritious BUT, the quality of liver is THE MOST important part of it all (google it). It is important to eat liver ONLY from grass-fed/finished and/or pastured animals (this goes for beef, pork, chicken, etc). I can't even describe how tasty this meat is. Most cuts only need salt and pepper and the right cooking method.
