Beef Suet Beef suet is the raw, hard fat found around the loins and kidneys. Beef suet contains a higher level of triglyceride than tallow, giving it a higher melting point and sol idifying point. Suet is used in many recipes, such as puddings, pastry, and sweet mincemeat. All of our beef is unaged and domestically raised by local American farmers and Angus-bred. Our beef farmer pasture raises their beef and grain finished from harvest grown on their farm.
