Rafi’s Beetroot Raita Pack creates a sweet, creamy and peppery yoghurt-based accompaniment. We recommend using beetroot for our Raita Pack as the earthy beetroot complements the pungent and fresh spices in this mix. You can also use pre-cooked beetroot to make this recipe quicker. Rafi referred to Raita as a ‘yoghurt salad’ which is served as an accompaniment with any hot and spicy meal. In her ‘Indian Vegetarian Cookery’ book she had several variations of Raita like walnut, carrot, beetroot, tomato and onion. Our Beetroot Raita is similar to a South Indian-styled raita which is usually called 'Pachadi' or 'Perugu pachadi'.
