It is often used to make curries, sambar, dal, stew, soups, halwa and chutney. Bengali squash can be prepared with the peel on or off. Generally, the peel, seeds and spongy interior are removed before cooking. Look for firm gourds with smooth, unblemished skin and a fresh green stem.
