Bentonite is a type of clay that is commonly used in brewing/winemaking as a fining agent. It is added to the wort or must before fermentation to help clarify and remove unwanted p articles, such as proteins and other haze-causing compounds. Bentonite is a negatively charged clay that attracts positively charged particles in the wort, causing them to clump together and settle out. This helps to improve the clarity and stability of the finished product. Add 2 tsp to 1/2 cup of warm water and re-hydrate for 24 hours before adding to wort/must.
