100% varietal wine made in the tradition derived from the word “fermento” referring to the grapes tendency to ferment vigorously, the grape is cooled for one night before destemmin g and pressing then put in a steel tank to ferment with indigenous yeasts for 48 hours before the skins are separated and the must fermented at 20°C until the sugars are completely depleted.
