This is an Ethiopia selection from the World Champion Series project, in collaboration with 2016 World Barista Champion Berg Wu. Despite limited machinery and equipment in Ethiopia , the coffee was carefully pulped while preserving as much mucilage as possible. It then underwent a three-stage density separation to select only the highest-density parchment, which was immediately transferred to African beds for drying. The quality of a honey process depends on factors such as mucilage content, fermentation during drying, humidity, drying speed, temperature, and sunlight.
