This is grass-fed beef oxtail, also known as beef tail, cut into round pieces. It is perfect for long-simmered dishes such as bone broth, beef bone soup, and tail soup. Beef tail i s naturally rich in collagen, and when simmered slowly over a long period of time, the collagen that melts out from the tail bones turns gelatinous and creates a rich, soft texture. The broth develops a deep, beefy umami flavor that makes this cut especially well suited for nourishing soups and slow-cooked dishes. Please note that the size of the oxtail pieces may vary within each pack. The cattle are raised free-range by family farms on Europe's rich pastures. They're grass-fed their entire lives and if lush green grass is not available due to the season or weather - especially during the winter - the cattle are fed a mix of all-natural grains and vitamins - all free of pesticides, GMO, and nasties.
