This limited release is made from low-yield and hand picked fruit to produce a premium wine with intense colour, flavour, structure and regional characters. Vineyard Region: Yarra Valley & Murray River. Grape Variety: Cabernet Sauvignon, Shiraz, Petit Verdot, Sangiovese Vineyard Planted: 1990, 2000 & 2002 Wine Analysis: Alc/Vol. 13% Harvest Date: March 2017 Bottling Date: July 2018 Total Production: 4068 Bottles Bottle Size: 750 mL Standard Winemaking: De-stemmed grapes into open fermenting vats. Juice was inoculated with a suitable yeast culture, the cap was hand plunged 3 times daily, with total maceration time of 12 days. The fermented wine was pressed into tanks to undergo malolactic fermentation. Maturation: In 225-litre new and one-year-old French Oak Barrels, for a period of 15 months. The four wines were then blended and clarified prior to bottling. Colour: Deep Maroon with a purple hue. Aromas: Red cherry, strawberry, to black pepper and liquorice. The Petit Verdot component adds intense dark fruit aromas of fresh blackberry, strawberry and blackberry. Palate: Supple and bright, sweet red plum, red berries and raspberry cream. Peak Drinking: This wine will continue to improve over the next 5 to 10 years. Vegan Friendly. Released: March 2020.
