The Marcato Biscotti is a handheld biscuit press from Marcato's Design line, made from food-grade anodised aluminium alloy. It comes with 20 interchangeable dies covering a range o f shapes, and a two-position knob for switching between small and large biscuit sizes. One cylinder load produces 20 to 25 large biscuits or 35 to 40 small ones. No parchment paper or greasing the tray required. Available in black, red, silver, green and powder blue. Made in Italy. How It Works Fill the cylinder with your biscuit dough, fit the die of your choice, and press directly onto the baking sheet. The dough releases cleanly onto the tray without sticking, and the die is swapped by hand in seconds. The two-position knob on the adjustment ring controls the amount of dough released per press, giving you small or large biscuits from the same load.
