Tripe is the edible stomach lining of ruminant animals such as cows, sheep, bison, giraffes, elk and more. Ruminant animals have 4 stomach compartments through which food moves dur ing the digestion process. Green tripe is a term used to refer to tripe that has not been washed and still contains remnants of the animal's stomach contents. Although green tripe can sometimes have a green tint due to the greenery these animals feed on, it is most commonly brown.
