Bison Rib Eye is an excellent choice when you're looking for a very tender cut that is suitable for grilling. We recommend not to cook Bison over an internal temperature of 129F (m edium rare). Choose a 10-12 oz portion for a 1" thick cut. Bison is a lean meat that is very high in protein and full of flavour. It is similar to beef, but with a more distinct earthy flavour. Alberta is home to many fine Bison farms and we are proud to offer Bison that is raised locally on pasture right here in Alberta.
