Bison Tenderloin is an excellent choice when you're looking for the most tender cut that is suitable for grilling. We recommend not to cook Bison over an internal temperature of 12 9F (medium rare). Choose a 6-8oz portion for a 1" thick cut. Bison is a lean meat that is very high in protein and full of flavour. It is similar to beef, but with a more distinct earthy flavour.
