Attieke, also spelled “attiéké,” is a traditional Ivorian dish made from fermented and processed cassava. It’s a popular side dish in West African cuisine. Frozen attieke is the preserved version of this traditional food. **Key Features of Frozen Attieke:** – **Preparation:** Attieke is made from cassava that is grated, fermented, and then dried. The dried granules are later rehydrated and steamed. When frozen, attieke is preserved after the preparation process for future use. – **Culinary Use:** Frozen attieke is used as a side dish and often served with various main courses, particularly in Ivorian, as well as broader West African cuisine. It complements stews, grilled or roasted meat, fish, and vegetables. – **Texture and Flavor:** Attieke has a slightly sour flavor due to the fermentation process and a light, fluffy, and granular texture when properly prepared. – **Nutritional Value:** Cassava-based attieke contains carbohydrates and some vitamins and minerals but is primarily valued for its role as a starchy accompaniment in meals. – **Culinary Convenience:** Freezing attieke allows for its preservation, ensuring its availability for consumption at a later time without significant alteration to its texture or taste. Frozen attieke offers the convenience of a traditional West African side dish, allowing for its availability for consumption even when fresh attieke might not be immediately accessible. Its use adds a unique accompaniment to various main dishes in West African cuisine.
