Right so this one's a bit of a throwback actually. I don't know about you but when I was growing up Black Forest cake was like THE fancy cake. The one you'd see in bakery windows and think blimey that's a bit posh. Cherries. Chocolate. Cream. Layers of it. Felt very grown up and decadent. Anyway we don't do it exactly like the old-school versions. Updated it a bit because honestly some of those recipes from back in the day were way too sweet. Like hurt your teeth sweet. So I messed about with it until it felt right. Here's what we're working with. Chocolate sponge first. Nice and dark. Damp. Not that dry crumbly nonsense that gets stuck to the roof of your mouth. Then we soak it. Just a little bit. Cherry juice and a tiny splash of something else. Nothing boozy really just enough to keep everything moist and bring out the fruit. Then the cherries. Proper ones. Not the bright red radioactive ones from a jar. Good dark cherries that actually taste like cherries. Some go in between the layers. Some go on top so you know what you're getting. Cream in the middle and on top. Lightly whipped. Not too thick. Just enough to balance all that chocolate. Then chocolate shavings everywhere because why not. Who keeps buying this? Honestly it's all over the place age-wise. Had a bloke in his sixties order one last week said it was his wife's favourite since they were dating. Then a girl came in the next day maybe twenty two twenty three saying she saw one on Pinterest and had to have it for her birthday. So I dunno. Guess some things just stick around for a reason. The cream does what cream does. The cherries try and escape. Chocolate gets everywhere. But honestly that's half the fun isn't it. Cakes that are too tidy feel a bit sad. Right. That's the Black Forest one done. Proper old school but better. At least I think so anyway.
