India Pale Ale Tin Yeast: 1 x Mangrove Jacks M44 West Coast Hops: 1 x Mangrove Jacks Recipe Range H3 West Coast Blend 50g Enhancer: 1 x Mangrove Jacks Recipe Range E3 Dark Dried Malt Instructions Clean and sanitise your fermenter, lid, airlock and mixing paddle with your preferred sanitiser before you start. Remove the lid, yeast sachet and can label. Stand the can in warm water for 10 minutes to soften the extract. In your sanitised fermenter, mix 2L of boiling water with your E3 Dark Enhancer. Open the can, add contents and rinse the can. Stir well. Top up to 18L total with cold water to reach 20-25°C. Sprinkle M44 West Coast Ale Yeast onto the surface, leave 10-15 minutes, then stir. Fit airlock and grommet, seal fermenter. Ferment at 18-23°C for best results. After 3-5 days, check your SG. When it reaches 1.020 or below, add H3 West Coast Hops — don't stir. Seal back up and leave 2-3 days until bubbling stops. After 7 days (or when bubbling ceases), take an SG reading and compare with the FG target of 1.011 (+/- 0.002). Wait 48 hours and take a second SG reading. Critical Do not bottle until fermentation is complete. Fermentation is complete ONLY when both SG readings taken 48 hours apart are identical and within your FG target. Sanitise your bottles and syphon. Transfer beer leaving 5cm of headspace. Add carbonation drops per pack instructions, or table sugar at 5g per litre. Store in a warm place for 2 weeks to carbonate, then cool/dark place for 1 week to clear. Ready when clear; flavour improves with age.
