Jasper Hill Farm's Black Label Select program was designed to identify the choicest cheeses from the Cellars and give them a special label of distinction. Of all of the thousands of batches of cheese that make their way through the Cellars each year, only a few are chosen by Jasper Hill's sensory team for the Black Label Select program. Alpha Tolman is a deliciously nutty Alpine-style cheese similar in style to cheeses like Gruyere, Comte, and Appenzeller. Young wheels of Alpha Tolman are washed with a cultured brine to cultivate a rosy orange rind that imparts a funky depth to the ripening paste beneath. Black Label Alpha Tolman is bold and complex with a long and lingering finish. The wheels boast nutty, toasted, and meaty flavors (think dry-aged steak in cheese form!) rounded out by an undercurrent of cultured butter and sweet caramelized onions.
