Originating in Champagne, where both red and white grapes are used in the production of sparkling wine, the term Blanc de Blancs was used to describe wines made from solely white grapes. Our Blanc de Blancs is a beguiling blend of some of the finest white grapes on our estate. Grape Varietals The Chardonnay gives this wine its elegance, rich creaminess and length; the Sauvignon its freshness and citrus flavours, while the Semillon delivers texture and character. Winemaking Picked in cases and pressed pneumatically as whole grapes. Fermentation takes place at 18°C. Maturing The Chardonnay is fermented in oak (and undergoes malolactic fermentation) and matured for a further two months before being blended with the Sauvignon Blanc and Semillon. Taste A pleasing balance of citrus and stone fruit, freshness and discreet oak character. Ageing It can be kept for 3 to 4 years but it is preferable to drink it in the same year. Serving This wine can be served as an aperitif, with Brie & Gruyère or with delicate fresh fish and shellfish. To be served chilled at 8°C.
