Hand Harvested on the 20th of March 2025. Fruit was gently whole bunch pressed with minimal skin contact to give it its delicate copper hue. It was fermented at a cool temperature in stainless steel to preserve the aromatics and structure. Fermentation was stopped upon reaching balance then heat and cold stabilised, sterile filtered and bottled on the 17th September 2025. Fresh aromas of nectarine, pear & subtle spice.
