The latest addition to Blenheim Forge's Classic collection of hand-forged kitchen cutlery is the ever-versatile, hardworking deba in Blenheim's well-loved san mai steel formula. Symmetrical bevel geometry, a tough, sharp high-carbon steel edge, and stiff, thick spine produce a blade that will excel at a wide variety of cuts. Traditionally a Japanese fish knife with the power to move through skin and bone with stability and precision, this new Deba from Blenheim's South London workshop is suited for right and left handed chefs and features a comfortable, tactile grip of walnut wood with solid copper. The three layer steel formula's outer cladding shows the layers of its suminagashi layering, with hammer marks visible through the flats above, and a dark edge of Aogami Blue No.2 steel.
