A rectangular, blue iron, baking pan for focaccia and Roman style pizza. Blue iron baking pans are heavy, sturdy pans made of carbon steel that have been through an electrochemical process to stop rust forming, whilst also hardening the surface. There are many advantages, as the steel makes for even heat distribution, excellent heat retention and can withstand high temperatures without the tray warping. With proper care these trays will last for many years. They also do not have a non-stick coating but produces a natural, healthier non-stick patina over time. These trays are ideal for giving pizzas, breads and pastries a nice crisp base. Instructions for preparing and seasoning the blue iron tin before use: Before use, we recommend the treatment called the 'burn'. Start by cleaning the tin pan well with a dry paper towel to remove traces of grease used by the manufacturer as a rust protection. Bring the oven to 150-160°C and put the tin pan inside, leaving it at that temperature for 30 minutes. Remove the tin pan and let it cool to room temperature. The 'burn' - Preheat the oven to a temperature of 250°C Before placing in the oven, grease the tin pan all over, including the underside with extra virgin olive oil. Put the tin pan in the oven and leave it for 30 minutes. You will notice an unpleasant smell due to the oil that is vaporised and vitrified by the heat. In some cases there may also be smoke. Ensure the room is well ventilated. Remove the tin pan and let it cool to room temperature. Repeat the operation a second or third time. You should notice a film formed by the vitrified oil on the tin pan. At this point the dough will no longer stick to the bottom of the pan. For cleaning after use, you only need to wipe the tin with a dry paper towel. Do not use water, detergents or abrasive scourers. Oil before storing in a dry place. Please note it is normal to expect the blue iron pans to have a slightly mottled surface from the protective oil used during manufacturing.
