Blue Pools are grown on our home farm in Hood Canal (right alongside our Hama Hamas), but they’re tumbled to develop deep cups and smoother shells. The result is a more uniform oyster that’s easier to shuck and ideal for clean, polished presentation on the half shell. Compared to our beach-grown varieties, Blue Pools tend to have more body, with a finish that leans toward the earthy sweetness of carrot rather than cucumber.
