White tea is voluminous — fill the spoon properly. 02 Heat to ~80°C Boil and let stand 30–60 seconds, or pull just as bubbles form. White tea is delicate — over 85°C the cup turns flat. 03 Steep 3–5 Minutes Three for a brighter cup, five for fuller body. Pai Mu Tan can re-steep — second pour stays sweet.
