Bodegas Dios Baco is one of Jerez's most respected traditional producers, crafting a full range of classic sherry styles with an emphasis on authenticity and terroir. Amontillado begins life as a Fino — aged under flor for the first nine years before being fortified, at which point the flor dies and the wine begins to oxidise. This darkens the sherry and develops its distinctive nutty character. It is only classified as a full Amontillado after a further eight years of oxidative ageing.
