Handling Tip Selection Bok choy has fleshy, firm stalks without brown spots. Bok choy has glossy dark green leaves with no bruises and is not wilted. Storage Bok choy should be stored at 32°F - 41°F (0°C - 5°C) with relative humidity above ninety-five percent with mist. The typical shelf life is seven to ten days. Bok choy is not sensitive to ethylene, a naturally occurring gas that regulates ripening, and produces a low amount of ethylene. Bok choy is not sensitive to chilling injury and should be stored as cold as possible without freezing. Bok choy freezes at 31°F (-0.5°C).
