Grapes: 100% Chardonnay Origin: Chardonnay grapes from the Crevoglio vineyard. Production: Second fermentation in pressurized tanks (Martinotti Method). Temperature-controlled ferm entation. Dosage at the beginning of the year after harvest. Second fermentation lasts 28 days. Matured on lees for eight months. Tasting Notes: Creamy with a beautiful foam and fine perlage. Bright straw color. Intense, lively, and balanced palate. Gastronomic Pairings: Excellent aperitif. Pairs well with fish or fresh cheese. Also try with warm vegetable and puff pastry starters.
