Use it in Belgian strong ale, barleywine, imperial stout, traditional mead, fruit wine, or cider intended for aging. It can add maturity to the profile without increasing alcohol. Orange peel, cherry, plum, vanilla, raisin, cinnamon, and oak complement it.
