The grapes are fermented in stainless steel tanks with twice-daily pump-overs, then undergo malolactic fermentation in the estate's wine caves before aging 18 months in a combination of French and Hungarian oak barrels. The significant diurnal temperature swings at this elevation — warm days followed by cool mountain nights — allow extended hang time that builds concentration and layered flavor while preserving the natural acidity that gives this wine its structure and freshness.Tasting NotesAroma: The nose opens with aromatic waves of ripe mulberry, black plum, and cassis, then deepens into anise, dried herbs, and violet. Underneath, subtle layers of vanilla and mocha emerge from the oak aging program.Taste: Entry is immediately appealing, with youthful blackberry and blueberry fruit flooding the palate alongside a bright citrus-zest lift. The mid-palate reveals dark chocolate and integrated toasty oak, followed by savory notes of black truffle, earth, and mineral. Dense, structured tannins grip through the peak, providing a serious architectural backbone.Finish: The finish is long and supple, carrying lingering dark fruit and licorice through a drying, grippy tannin structure. It closes with earthy minerality and a subtle cocoa warmth that invites another sip.How to Drink High Serenity CabernetThis wine rewards most when served slightly below room temperature — around 62–65°F — in a large-bowled glass that allows its aromatics to fully open. Decanting for 30 to 60 minutes softens the substantial tannins and reveals more complexity. For those looking to mix with wine-based cocktails, a Cabernet Sangria built around dark berries and citrus mirrors its fruit profile; a Kalimotxo (red wine and cola) plays off the wine's inherent dark chocolate and licorice notes; and a classic Mulled Wine during cooler months amplifies the baking spice and anise character already present in the glass.Best For Steak night with friends featuring grilled or charred red meats Building a California Cabernet vertical or Lake County tasting flight Gifting a red wine enthusiast who appreciates bold, structured bottles Cellaring for 5–8 years to track how the tannins evolve Frequently Asked QuestionsWhat does High Serenity Cabernet taste like? It delivers bold blackberry and cassis fruit layered with dark chocolate, black truffle, and toasty oak, all framed by dense, grippy tannins and a long finish. The high-altitude fruit adds a distinctive mineral freshness that keeps the richness in balance. How does High Serenity Cabernet compare to Napa Valley Cabernets? Both regions produce full-bodied, oak-aged Cabernet Sauvignon, but High Valley AVA's extreme elevation — over 1,800 feet — and cooler nighttime temperatures tend to produce wines with brighter natural acidity and more pronounced mineral character than many valley-floor Napa bottlings. At its price tier, the High Serenity often delivers concentration and complexity that competes with Napa wines at significantly higher price points. Is High Serenity Cabernet good for sipping neat? Absolutely — its layered aromatics, complex mid-palate, and long finish make it a rewarding wine to drink on its own, especially after a brief decant to let the tannins soften.Where is High Serenity Cabernet made? It is produced by Brassfield Estate from their High Serenity Ranch vineyard in the High Valley AVA of Lake County, California. The vineyard sits at elevations above 1,800 feet in the volcanic soils of the region's mountain terrain. What foods pair well with High Serenity Cabernet? Grilled ribeye steak complements the wine's dense tannins and dark fruit. Braised short ribs echo its earthy, savory depth. Aged hard cheeses like Manchego or Parmigiano-Reggiano match the wine's intensity without overwhelming it. Dark chocolate desserts mirror the cocoa and licorice undertones in the finish. Roasted lamb with rosemary and garlic plays beautifully against the dried herb and anise notes on the nose. What sizes does High Serenity Cabernet come in? The standard release is available in a 750ml bottle. Is High Serenity Cabernet worth the price? With a 94-point score from Wine Enthusiast and estate-grown fruit from a rare high-elevation vineyard, this wine positions as a premium expression that consistently over-delivers relative to its price tier within California Cabernet Sauvignon. Why High Serenity Cabernet? The defining differentiator here is terroir: fruit grown at over 1,800 feet in an AVA where extreme diurnal temperature shifts produce a level of natural acidity and mineral complexity uncommon in California Cabernet at this tier. The 94-point Wine Enthusiast score on the 2021 vintage validates what the winemaking approach — 18 months in French and Hungarian oak, malolactic fermentation in caves — delivers in the glass. This is not a soft, fruit-forward California Cab designed for instant gratification; it has structural ambition and aging potential. For drinkers seeking a Cabernet Sauvignon that marries power with freshness and offers genuine sense of place, High Serenity is a serious contender from an often-overlooked corner of the state.
