The lot offers farm-level traceability and is produced by selected growers in the Carmo de Minas region, located in the south of Minas Gerais, Brazil. Harvesting & SortingThe coffee is selectively hand-picked to harvest only the ripest cherries. These cherries then undergo a density-sorting process using a traditional Brazilian lavador machine, which separates the lower-density fruit from the lot. Drying MethodTo complete the preparation, the coffee is sun-dried on open patios for three days. It is then transferred to mechanical dryers for a minimum of 72 hours until the beans reach their optimal moisture level.
