A soft and tender cheese with a fine, delicate rind, this cow’s milk cousin to Brefu Bach delivers milky depth, subtle sour-cream richness and a clean, buttery tang. Minimum weight - 90g. Wild moulds- spots of blue, green and grey moulds - often develop on the surface during maturation. They are perfectly safe to eat and do not negatively affect the flavour of the cheese.
